A rapid and precise method for determining water content in nuts as a tool for determining their quality during storage

Abstract This study was designed to examine impact of storage conditions on hazelnut quality and develop a quick method for testing moisture. The change sample mass water content were assessed by convection drying means moisture analyzer—IR radiation. samples tested as: nuts, nut kernels, crumbled husk nuts. They stored in closed open packages at 45% 80% humidity constant temperature (23 °C). It has been observed that the 45%, hermetic packaging reduced loss 18%, caused reduction kernel 5.5%. found best effects obtained relative air (i.e. weight 2.18%, kernels 0.78%, shell 1.4%). At this content, comparison with equal lower 4.65%, 10.79%, more than two times when without packaging. Water desorption from under these 0.4% packaged 3% unpackaged product. Determining IR radiation method, compared standard took much less time, it about 1 h. 5 min (approx. 6 faster) measurement accuracy 0.26%. Therefore paper proves described positively influences time restrictions especially duration analysis is key determinant. According authors, can be implemented both laboratory industrial tests, saving acting immediately technological process requires support.
